Quinoa Salad

Recipe & Picture: Rusna Chowdhury

Ingredients: Vegetable broth 2 cups
Quinoa (uncooked) 1 cup
Chickpeas (Cooked) 1 cup
English cucumber (chopped) 1 small
Red onion (cut crosswise in half & thinly sliced) 1 small
Extra virgin olive Oil 2 table spoon
Lemon juice 1 tea spoon
Avocado (Cut in Small pieces) 1

Method: Bring broth and quinoa to boil in saucepan on high heat simmer on medium-low heat 15 min or until liquid is absorbed. Let it Cool. Combine cucumbers and onions in medium bowl. Add olive oil, lemon juice toss to coat. Mix quinoa, chickpeas and remaining cucumber onion salad. Add avocado. Ready to serve. Enjoy your meditarian salad.
